  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the oats and chopped walnuts.

  3. In a separate bowl, mix together the coconut oil, stevia, almond butter, maple syrup, cinnamon, and vanilla extract until well combined.

  4. Pour the wet mixture over the oats and walnuts, and stir until evenly coated.

  5. Add in the hemp hearts, dried blueberries, shredded coconut, and buckwheat, and mix until all ingredients are well combined.

  6. Spread the mixture onto the prepared baking sheet in an even layer.

  7. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown and crispy (in the last 10 minutes keep an eye on your granola to make sure it doesn't burn!).
